_ Ingredients
2tablespoons olive oil
3/4pound skinless, boneless chicken breast halves, cut into cubes
1cup green beans cut into 1-inch pieces
2medium carrot, peeled and sliced (about 1 cup)
8cups Swanson® Chicken Broth or Swanson® Organic Chicken Broth or
Swanson® Natural Goodness® Chicken Broth
1large onion, chopped (about 1 cup)
2tablespoons chopped fresh parsley (optional)
1cup uncooked cheese tortellini (we used dried- the kind you keep in your pantry)
_ How to Make It
Season the chicken as desired. Heat the oil in a 6-quart saucepot
over medium-high heat. Add the chicken and cook until well browned,
stirring often.
Add the carrots, beans and onion and cook for 4 minutes, stirring
occasionally. Stir in the broth and heat to a boil. Reduce the heat to
medium-low and cook for 7 minutes.
Add the tortellini and cook for 10 minutes or until the tortellini is
tender. Season to taste. Sprinkle with the parsley before serving, if
desired.
