Country-Style Garden Vegetable Sandwiches




_ INGREDIENTS

1/2 cucumber, sliced

60 mL (1/4 cup) Compliments Whole-grain Dijon Mustard

4 leaves red leaf lettuce

4 radishes, sliced

1 tomato, thinly sliced

4 olive ciabattas, sliced in half horizontally

To taste, salt and pepper

150 g (5 oz) fresh goat cheese

_ DIRECTIONS

Toast ciabattas until crispy in a toaster or toaster oven. Spread goat 

cheese on bottom half of each ciabatta.

Top with tomato slices and season with salt and pepper to taste. 

Garnish with a lettuce leaf and then add radish and cucumber slices.

Spread remaining ciabatta halves with mustard and close 

sandwiches.
