_INGREDIENTS
1 Olive ciabatta (or Provençal Herb ciabatta)
75 g (2½ oz.) sliced provolone
125 ml (½ c.) fresh baby spinach
60 ml (¼ c.) very thinly sliced zucchini
60 ml (¼ c.) grilled red bell peppers, cut in strips
15 ml (1 tbsp.) basil pesto
15 ml (1 tbsp.) hummus (or baba ghanoush)
_ DIRECTIONS
Spread pesto and hummus on bread, layer all ingredients and close
ciabatta.
