Egg & cheese breakfast sandwich




_ INGREDIENTS


1 egg

1 English muffin

1 slice of cheddar

1 slice of tomato

To taste, mayonnaise (optional)

To taste, salt and pepper



_ DIRECTIONS

Toast English muffin in toaster.

Whisk egg with a fork in a bowl, add salt and pepper, and microwave

on high for 45 seconds or until yolk and egg white are firm.

Spread mayonnaise on English muffin if using. Place the cooked egg,

sliced cheese and tomato on one half of muffin and top with the other.

Enjoy.
